Here's a recipe for Pumpkin Tarts from a 1959 Farm Journal's Country Cookbook.
1 tblsp. cornstarch
3/4 c. sugar
1/2 tsp. cinnamon
1/4 tsp. ginger
2 egg yolks, slightly beaten
1 c. milk
3/4 c. cooked or canned pumpkin
2 egg whites, stiffly beaten
1/2 c. heavy cream, whipped
1/3 c. chopped pecans
Mix cornstarch, sugar, cinnamon and ginger. Stir in egg yolks and milk. Cook
over hot water in double boiler until thickened, stirring constantly. Add
pumpkin. Freeze. Break into chunks; turn into bowl. Beat smooth with rotary
beater (this extra beating adds air, makes a smoother ice cream).
Fold in egg whites, whipped cream and nuts. Pour into 8 small tart shells.
Freeze firm. Makes 8 servings.
