their past.  Sometimes these special recipes get lost.  This section is to help
people who are looking for lost recipes from their past.  If you submit a

MEATBALL & CHILI CASSEROLE

Meatballs:
1 lb.ground chuck
1 lb.ground pork
1/4 cup dry bread crumbs
1 clove garlic, crushed
1/4 tsp pepper
2 eggs,beaten
1/2 cup milk
1 tsp oregano
1/2 tsp basil
1/4 cup chopped parsley
2 tbls parmesan cheese
1 tsp salt
2 tbls olive oil

Chili:
1 cup finely chopped onions
1 clove garlic,crushed
1 can (1 lb) tomatoes, untrained
1 can (8 oz) tomato paste
2 tbls chili powder
1 tsp salt
2 tsp dried oregano
1 tsp dried basil
1 1/2 tbls flour
1/4 cup water
1 cup red wine (or beef broth)
2 cans (15 oz) dark red kidney beans

1. Make meatballs: In bowl, combine meats,bread crumbs, 1 clove
garlic,pepper,eggs,milk,1tsp oregano,1/2 tsp basil, parsley,parmesan cheese,and
salt.  Mix well.  With moistened hands shape into 24 (1 1/2 ") meatballs.

2. Pre-heat oven to 350F. In hot oil in skillet,brown meatballs well, Remove to
3 quart casserole.

3. Make chili. Discard all but 2 tablespoons drippings. In hot drippings, saute
onions and garlic for about 5-6 minutes.

4. Add tomatoes, tomato paste,chili powder,salt,oregano,basil,1/4 cup
water.Bring to boil.  Pour over meatballs.

5. Bake covered, 1 hour. Combine flour with wine (or broth) and stir into
casserole along with beans.  Bake, covered, 25 minutes longer.Serve.
