Pronounced KEE WAH is was the primary cereal grain of the Aztec... you dehull it and rinse it, and it's wonderful, nutritious and not pricy at all... we bought some at Central Markets in FW after my sister mentioned it. Had never heard of it before. But it's a wonderful wheat y light grain. Like Bulger but lighter /softer. Easy to cook, like rice but you can peak! :) Interesting ! We don't have to eat corn you know. It's actually not very nutritious and if not grown with say squash or something to put nitrates into the soil (Amercian Indians taught colonials to do this ; grow the squash and beans around the corn so it could climb up the stalk. They knew nothing about nitrates but what they did worked! to keep the soil healthy. Corn along leeches the soil which is why if you don't rotate crops the soil goes bleah. This is what Indians knew by experience. They didn't go to school to learn it or have gummit study it lol. They learned and passsed on their info! :) So we wouldn't have to learn the hard way. Trouble with that is humans are forgetting how to learn ! Corn is cash crop but it's better off as fuel than a food... Just as we need to get undependant of Mid East Oil, we need to learn about OTHER and better sources of nutrition. There are better grains out there... than corn. Rice is better, wheat, oat, rye... Quinoa (keewah)... :) So don't worry too much about corn. It's in everything you know. Corn syrup is and corn oil makes your pans harder to clean for the film it leaves behind.. . imagine what it does inside you. Dog food makers use it as a filler. Dogs don't digest it and this isn part why their poop stinks so bad lol... the corn. Let corn to to the pigs and the gas tanks where it's of better use. All it does for humans is make them fat...
