We don't try to change motherboards on production servers and put them back
online unless there's a large window to work with.
As for upgrades, we generally use HP, Compaq or IBM servers, where the
upgrade path is through a processor board or overdrive processor. It's
extremely low risk, very fast to implement and very fast to undo if anything
is even remotely suspicious.
