Just twisted pair basically. It has more twists per foot and is built to a
higher standard than Cat4 and Cat 4 (IIRC: Cat3 is 10mbits, Cat4 20mbits,
Cat5 100mbits+)
There is a proposal for Cat6, but it is so cumbersome with pairs glued
together, it's unlikely to be used much...
Twisted pair cable comes in shielded or unshielded. For most LAN applications
unshielded is fine, though if you have a lot of interference (eg industrial
environments, etc) shielded is much better.

The internet comp.lan.ethernet FAQ is quite good. Don't know where you could
get it though...
