My first ever real favourite piece was Bach's Mass in B minor, followed
closely by Bartok's Concerto for Orchestra - both when I was around 15 years
old. I then passed through an omnivorous phase, going to the Proms (a series
of concerts every night a week for 8 weeks) for about 6 years, which gives
one a wonderful exposure to the whole repertory (more or less). After that I
started singing in a church choir as a bass, doing unaccompanied Tudor
anthems and masses - mainly British composers like Byrd, Tallis, Gibbons (bit
modern really), Taverner, but also some earlier continental composers like
Dufay, Josquin des Pres. Of course from time to time we had a rush of blood
to the vocal chords and tackled fun things like Schutz (7 last words) and
Monteverdi (Psalms from the Vespers) and even the odd modern composer like
Poulenc, Stravinsky, Tippett and on one disastrous and memorable occasion,
Peter Maxwell-Davis.
For listening now, I choose renaissance and pre-renaissance music, and also a
certain number of late 19th and 20th century composers - Bruckner and Mahler,
Stravinsky, Bartok (yummy), Vaughan-Williams, Janacek, Poulenc.

I do like Rock very much, but mainly from the late 60s and their descendants.

Absolutely. 4-5 hours a night is really TOO little for me. Trouble is that

Title: Cream of Tomato Soup
Categories: Starters, Soups, Vegetables, British
Yield: 4 servings
1 kg Ripe tomatoes
100 g Chopped onions
125 g Chopped young carrots
Bouquet garni
1 l Stock
Salt, pepper
300 ml Cream
Chopped chives or basil
Simmer the vegetables and bouquet with 3/4 of the stock until they are
tender. Remove the bouquet garni and pur‚e the soup in the blender or
sieve until it is very smooth. Taste, add seasoning and remaining
stock. If it is to be served cold, stir in the cream and chill. If it
is to be served hot, bring the cream to the boil in a clean pan and
add the soup gradually. In both cases serve sprinkled with chives or
better, chopped basil. If you like a spicy flavour, add nutmeg to the
soup as it cooks and sprinkle a little on top when it is served.
Modifications for sterilising
Do not season. Blend the soup, then sieve. Pour into 1l strilising
jars, and seal and sterilise in the usual way. When reheating, season
then bring 200ml cream to the boil and pour in the boiling soup
gradually. You may have to reblend to cure possible curdling.
