Title: Asparagus Salad With Muscadine Vinaigrette

Yield: 4 servings
2 c Muscadine wine
2 ts Dijon style mustard
1 ts Lemon juice
1 ts Cracked black pepper
1/2 ts Salt
3/4 c Salad oil
1 lb Fresh asparagus blanched
6 c Mixed baby greens or
Watercress
3 c Chopped radicchio
Fresh grated parmesan cheese
Optional
Thinly sliced fontina cheese
Optional
In medium saucepan heat wine to boiling. Boil gently uncovered until
wine is reduced to 2/3 cup. Cool to room temperature. Stir in
mustard, lemon juice, pepper, and salt. Whisk in salad oil. Transfer
to large bowl. Add asparagus and toss to coat. Top asparagus with
greens. Garnish with the cheeses if desired. Makes 6 servings.
