    I think you should be able to get the results you want with a white
reflector card but when I did it I didn't point the 283's head straight up.
Tilting it forward one notch seems to provide some fill-in the fill light
you mentioned.
    I believe one of the Sunpack potato masher units has both the bounce
head and the fill flash but I don't know the model number.
     Note that many (most?) bridal gowns now contain some sort of brightener
in the fabric that shows up as blue in the prints and is difficult, if not
impossible, to correct for in printing.  The flash tubes of the better
quality newer flashes have a UV coating to reduce the blue effect but older
units may not.  If time permits you might want to take some test shots of
the bride in her gown with the flash you plan on using.  If the gown has a
blue cast in the test prints see if you can get a UV filter used in color
printing (CP) our a slightly more expensive color correction (CC) acetate
filter that you can tape over the flash head.
     Its been some years since I took wedding pictures though and things may
have changed. . .
