Shark is a lot like tuna steak. Kinda dry IMHO. Best to be marinaded. I remember a long time ago I had 'bluefish" and it was such HUGE portion to this day don't even mention it to me..(I didn't finish it and it wasn't well prepared. Too dry. I had alligator nuggets a couple times. They were very good!
