That is actually quite a tall order. Ezekiel is NOT an easy book!

Which right away makes it a difficult class. But again: Ezekiel is a difficult
book. Anything 'fairly simple' is bound to be either inadequate, unbearably
controversial, or simply wrong.

Well, I can at least suggest good background information for the teacher to
read. But I cannot vouch for its suitability for the class. The Word Commentary
series has some very good volumes. You would not go too far wrong using that for
Ezekiel.
