      Title: Rice Croquettes
 Categories: Crs96, Dunkard, Post96
      Yield: 4 servings

           Text

Take a teacupful of cold well-boiled rice, and a teaspoonful each of
sugar and melted butter, with half that quantity of salt, and to them
add one beaten egg and sufficient milk to bring all to the
consistency of a firm paste after thoroughly beating and mixing.
shape into oval balls and dip in beaten egg, followed by dipping in
flour or cracker dust. Fry in sweet, hot lard, turning with care, and
when done to a nice brown, put into a heated colander.
