BTW, found the Nigiri-Zushi which isnt made in my area, and indeed a
variatioon ¨uses sashimi on it. It's the one normally with no nori wrapper
and instead a ¨sort of hand pressed item (stick sushi rice in hand, fold
hand to make a ball, ¨place topping on it, and tie lightly with strip of
seaweed). It;s possible ¨Cindy had this type.

Not to worry. We have 'local names' and that may not be the right name in
¨Japanese for this fish. Just the one we use here for it. It's a
snapperish ¨looking thing. Could even be the Tagalog name for it

It's not all that hard to make. The hand type above is deadon easy to
make. ¨Just remember the rice has to me medium or short grain (calrose is
a good one ¨to use and easy to get outside of Japan). Has to be 'sticky
rice'.
