Looks a bit like snapper when sold as fillets but smaller. Cooks about the
¨same as it's a mild fish. Decent eats at a good price when in season.
Glad i ¨got the name close enough for your mom to figure out! Sasebo is
very 'engrish' ¨meaning the names are not true english or Japanese but a
mix.

Totally. Ask your Mom if she knows a flat tofu item made with sometimes
bits ¨of fish and sometimes bits of fruit, fried brown to almost crispy. I
have no ¨idea of the Japanese name for it. May be a local Kyushu food item
just like ¨our local 'kimchee'. It just *looks* like an oatmeal cookie at
the start (soft ¨type) and catches us astray when we first move here so we
call it a 'Sasebo ¨Cookie'.
The concession to kindness is if they see a kid in tow, they will warn ya
'not ¨cookie, tofu'. before you buy one. Charlotte and I got one each
first time in ¨the Tonoo market, with warning. Our Japanese is still
minimal but even then ¨we managed 'sweet' or 'fish' and Charlotte had sweet
(fruit bits) and i had ¨'fish' (Sakana).

No clue. Sorry! They mix tofu with other stuff, mash it flat then fry it
¨(possibly on a grill).
