It's a reboot.  They started from a point prior to TOS, changed an
event and moved forward from there.  Effectively sweeping EVERYTHING
away, including all of the televised history from TOS on.
You can't have it both ways.  You either have a reboot which gives you
a different setup and storylines or you simply remake what came before.

I see no evidence of wiping out Star Fleet.  Star Fleet already existed
by the time of the events in ST:Reboot.  Star Fleet came into existence
sometime between the major action in "First Contact" (in the time-trip
to stop the Borg from changing history) and the period ST:E took place
in.  The change Abrams &co made happened somewhere between the time
period of ST:E and TOS.
But yeah, I agree that the removal of Vulcan as a major player was
uncalled for.

I betcha they'll be Vulcan colonies around, which will leave them in
play.
