I use:

zip -9rS d:\backup c:\* -x c:\os2\system\SWAPPER.DAT

This recursively backs up everything on the C: drive to 
d:\backup.zip (on an external ZIP drive) using maximum
compression, except for the swap file, which is ignored.  To
restore simply "unzip d:\backup" from C:\
