These next three recipes were all forwarded to the Marquesa de Castellar
from the kitchens of the late Tsar Nicholas of Russia.  They were brought
to the Marquesa by a Russian colonel who was seeking refuge in Paris,
France.  I think all these recipe reflect the splendor of the Russian Court.
MMMMM----- Recipe via Meal-Master (tm) v8.02
 
      Title: Pineapple Omelette With Rum
 Categories: Posting
      Yield: 4 servings
 
      4    Eggs
        sm Amount of lemon zest
    1/2 ts Salt
      2 tb Sweet butter
      1 sm Can sliced pineapple
      1 tb Apricot jam
    1/2 c  Rum
      1 tb Sugar
 
  Beat eggs with lemon zest (scraping of lemon peel), sugar and salt.
  Place butter in a preheated skillet and add egg mixture.  When
  omelette is set and half done, chop pineapple into small pieces.
  Combine with jam and rum and fold into omelette for finishing.
  Sprinkle with sugar and serve.
