Yeah, far be it for me to expect umpires to actually follow the rule book.

Okay, as a ball player, how do you adjust for a ball that's more than a foot
outside? As a ball player, what do you do when you move up on the plate to
attempt to reach a ball way outside, and then the pitcher throws a ball on
the inside of the plate, where if you swing, you're lucky if you get it on
the handle of the bat?

First, the rule books don't allow for every ump to have their own strike
zone. And second, if you think those calls were just "a little outside,"
then I suggest you have your eyes examined.
