Title: Baked Green Tomatoes

15 lg Green tomatoes
Salt and pepper
2 c Brown sugar
3 c Coarse butter-cracker crumbs
2 Sticks butter
Cut tomatoes in half and arrange in an oiled shallow casserole. Season=
with
salt and pepper and spread each with a tablespoon of sugar. Cover with
crumbs and dot with butter. Bake at 350 F until tender but still firm -
the time will depend on the size and greenness of the tomatoes - but will
probably range from 30 to 40 minutes.
Note: 1/2" slices may be baked in this same manner. Bake 25 minutes.

Title: Fried Green Tomatoes - Southern Living

4 lg Green tomatoes; cut into
- 1/4-inch-thick slices
1/4 c Sugar
3/4 c All-purpose flour
1 ts Salt
1/8 ts Pepper
3 tb Bacon drippings
6 tb Vegetable oil
Layer green tomato slices in a small, deep dish, sprinkling each layer
with sugar; let stand 1 hour. Drain, reserving sugar liquid. Combine
all-purpose flour, salt, and pepper in a shallow dish; dredge tomato
slices in mixture.

Heat 1 tablespoon bacon drippings and 2 tablespoons oil in a large
cast-iron skillet over medium-high heat until hot; add about one-third of
tomato slices. Cook 2 to 3 minutes on each side or until golden. Drain on
paper towels. Repeat procedure twice with remaining tomato slices, bacon
drippings, and oil. Drain off pan drippings, reserving 1 tablespoon in
skillet. Stir reserved sugar liquid until sugar dissolves. Add to reserved
drippings in skillet; bring to a boil over medium heat. Cook, stirring
constantly, 1 minute or until slightly thickened. Drizzle over fried
tomatoes; serve immediately.
Makes 4 to 6 servings.
