      Title: Sesame Ginger Chicken Wings - Bon Appetit

      Yield: 6 Servings 
  
      2 lb Chicken wings, tips 
           -discarded, cut in half at 
           -joint 
    1/4 c  Soy sauce 
      1    2-inch-square piece fresh 
           -ginger, peeled 
      2    Garlic cloves 
    1/4 tb Freshly ground pepper 
    1/8 tb Dried red pepper flakes 
      1    Egg, beaten to blend 
    1/2 c  Dry broadcrumbs 
    1/3 c  Sesame seeds 
    1/4 c  (1/2 stick) butter, melted 
  
  Place chicken wings in large nonaluminum bowl. Blend 
  soy sauce, ginger, garlic, freshly ground pepper and 
  pepper flakes in blender or processor until ginger and 
  garlic are minced. Pour over chicken and mix well. 
  Cover and mannate at room temperature 2 hours or in 
  refrigerator overnight, stirring chicken occasionally. 
   
  Preheat oven to 400'F. Butter large baking dish. Stir 
  egg into chicken marinade. Combine bread crumbs and 
  sesame seeds in another bowl. Dredge chicken in 
  breadcrumb mixture. Place in prepared dish. Drizzle 
  with melted butter. Bake until chicken is brown and 
  crisp, about 45 minutes. Serve hot.

      Title: Grilled Fiery White-Peppered Chicken Wings

      Yield: 6 Servings 
  
     20    Chicken wings, cut at the 
           Joint 
           	(save wing tips for stock 
           Or discard them) 
    1/4 c  Freshly cracked white 
           Pepper 
      2 tb Salt 
    1/2 c  Soy sauce 
    1/4 c  Lime juice (about 2 limes) 
      2 tb Minced ginger 
      2 ts Minced garlic 
      2 tb Minced fresh red 
           	or green chile pepper of 
           Your choice 
      1 tb Sugar 
      2 tb Chopped fresh basil 
      2 tb Chopped fresh cilantro 
  
  Method Sprinkle the wings with pepper and salt. Grill 
  over a medium-hot fire until they are well browned, 5 
  to 7 minutes, turning a couple of times. Take the 
  largest wing off the fire and check for doneness by 
  eating it. Remove the wings from the grill and place 
  in a large bowl. Add all the remaining ingredients, 
  toss well, and serve. 
   
  Serving Suggestions: Try these with Watercress and 
  Crab Salad with Mangoes and Fish Sauce, and Savory 
  Watermelon and Pineapple Salad. (Included in Book).
