It sounds like your playback isn't quite in sync with what your capture 
system thinks is 29.97 (or whatever it is) frames per second, while the live 
stuff is. Some devices will try to sync to an external source if one is 
applied to the inputs, so you might try connecting your camera to the inputs 
of the VCR and letting it just feed live video even though you're using the 
VCR for playback. No guarantees...
Also: Don't try to capture off of a paused VCR or camera. If it works it's a 
miracle.
