Centrifugal force.  Take a corner sometime at a high rate of speed, and
notice how you tend to be pulled towards the outside of the corner.
Note too that medical and science labs use centrifuges to separate
liquids.  Note also-too that NASA and the Air Force use centrifuges to
train pilots/astronauts.

The Starfuries are obeying Newtonian physics.  Since they are not in an
atmosphere nor currently being effected by a gravitational source, when
not under thrust they can pivot on any axis the pilot chooses.
