I have a number of recipes for the different curry pastes that
sometimes go into Thai dishes - are you interested in any of those.
We have made some of those, but find it easier just to go buy the
ready made Thai curry pastes.

Title: Sweet and Hot Chili Sauce
Categories: Thai, Chili, Sauce
Yield: 1 servings
2 sm Fresh Chilies, seeded and
-finely sliced
3 tb Soy Sauce
Juice of 2 Limes
2 tb Rice Vinegar
4-5 T Sugar
3 tb Nam Pla (Fish Sauce)
Put all ingredients into a saucepan. Mix well, then bring to a boil
over high heat. Cook until mixture is reduced by half. Remove from
heat. Cover and store in the refrigerator until ready to use.

Title: All-Purpose Chili Sauce
Categories: Side dish, Thai, Sauce, Vegan
Yield: 2 pints
1 lb Red chili peppers, washed &
-- dried
2 c Rice vinegar
1/2 c Sugar
1/3 c Salt
1/3 c Sake
1 c Garlic cloves, peeled
Place all ingredients in a blender or food processor & blend until a
thick paste is formed.
Use to add some pizzazz to stir-fries.
