The 8 track tape box for Take 27A (also includes a few other takes) of
Let it Be shows:
1 - vocal
2 - (nothing listed)
3 - organ
4 - (nothing listed)
5 - sync
6 - drums
7 - guitar
8 - piano

So at least tracks 1, 3, 5 and 6 are consistent with the rooftop 8
track.   There's no track listing for the background vocals, nor for
John's bass.  It would be reasonable to guess that these were on tracks
2 and 4 respectively like the rooftop tape.

There's a scan of the tape box for Take 30 at
http://www.beatlesource.com/bs/e91745.html but it isn't very legible.
As
best I can tell, it says:
1 - vocal - (illeg)
2 - cello (illeg)
3 - (illeg)
4 - (guit solo??) (illeg)
5 - brass
6 - (bass??) - drums
7 - (guit??) - (illeg)
8 - piano

I've put (illeg) where I can't make out what's written, and added ??
where it's a bit unclear.  (The notation after "cello" may be "at
end".)  It does look like the original solo from take 27A may have been
wiped during the reduction mix.

All the tape boxes from the Let it Be sessions that I've seen have the
movie sync on track 5.  But I've only seen pictures of a few of the
boxes, and some of the boxes don't have a track listing.  So "always"
is doubtful...
