Transliterate. That's what I've done when writing German for the last ten
years. Since I've set up GoldED to do that automatically, I can't even
write an Umlaut here to demonstrate.

If things work for you, for God's sake don't change anything. To this day,
I have no idea why a given configuration works perfectly with one person
and gives the problems you described with another.
