Title: Broccoli & Crab Bisque^ - T O H

Yield: 4 Servings
1 c Sliced leeks; white only
1 c Sliced mushrooms
1 c Broccoli florets
1 Clove garlic; minced
1/4 c Butter
1/4 c Flour
1/4 ts Dried thyme; crushed
1/8 ts Pepper
1 Bay leaf
2 cn Condensed chicken broth
1 c Light cream
3/4 c Shredded Swiss cheese
6 oz Crabmeat; flaked
Fry leeks, mushrooms, broccoli and garlic in butter until broccoli is
crisp-tender. Remove from heat; stir in flour until smooth. Add broth
and cream; bring to a boil; cook, stirring, 1 minute. Stir in cheese
until melted. Stir in crab; heat through. Remove bay leaf and serve.
Makes 4 to 5 servings, about 5 cups.
