But then I'm not running an IPv6 network segment, I'm tunneling from the
machine to the other end. I want an IPv6 segment so I can run sniffs, etc.
Learning IPv6 is more than just configuring the machine to me. I need to
learn how the router commands work, how the network responds to traffic
levels, how to sniff and track and all sorts of things related to the
network not the machine.

No you don't. One point of IPv6 over IPv4 is that it only requres IPv4
support of the infrastructure. At the time time, you can have native IPv6
on your subnet using automatically assigned link local addresses.

over
the existing IPv4 infrastructure. It gets messy if you are behind a NAT.
If you want native IPv6, you do need new hardware or software.<

I have a routed subnet for my home network, I need a router that can do an
IPv6 tunnel to connect one IP address on that network via a tunnel to an
IPv6 provider and then I can run an IPv6 network segment in my home (with
a
machine or two on the IPv6 segment) without screwing up the whole network
  here.
