Sure. But then that becomes a reason to use larger sample sets that cut
across more cultural and religious boudaries. This they did.

But they adjusted for this. They examined many countries and regions of
countries. The practice of circumcision does not only divide along
Muslim/non-Muslim lines. So one can control for that if one has a sample
with enough variations.
