MMMMM----- Recipe via Meal-Master (tm) v8.05
Title: African Chicken Livers^

Yield: 1 Servings
2 tb Oil
1 lg Onion; chopped
2 cl Garlic; chopped
1 ts Fresh ginger; grated
1 lb Chicken livers; cut in bite
. sized pieces
1 tb Flour
2 tb Roasted peanuts; ground
1 lg Tomato; peeled & chopped
3/4 ts Basil
1 c Chicken stock or water
1 ts Ground coriander
1 ts Salt
1 ts Fresh chili; chopped
Black pepper
8 oz Spaghettini; cooked
2 Hard boiled eggs; quartered
1. Saute onion, garlic & ginger until lightly browned. Add liver &
cook 2 minutes. Sprinkle with flour, cook until slightly browned.
Stir in peanuts and cook another 2 minutes.
2. Add tomato & basil; saute 2 minutes. Stir in stock, coriander,
salt, chili & pepper. Simmer, covered, 5 minutes.
3. Arrange pasta on heated platter & top with liver mixture. Garnish
with eggs and serve.
