      Yield: 12 Latkes
 
MMMMM------------------------PEEL & GRATE-----------------------------
      6 lg Red-skinned potatoes
      1 lg Carrot
      1 lg Onion
      2 cl Garlic
 
  MMMM---------------------------MIX IN-------------------------------
      1 c Fine ground whole-wheat flour
        1 ts Salt
      1/4 ts White pepper
        4 lg Eggs

  Shape the batter into pancakes and deep-fry in oil.
  Garnish with applesauce or sour cream.
