I'll save this, thank you!  Here's my "quick" chicken recipe (I should MM
this):

In my Instant Pot, I put four boneless, skinless chucken breasts, a cup of
chicken broth, and sprinkle some Tone's Rosemary Garlic seasoning on it.  I
set the IP to pressure cook for 10 minutes.  When it's done cooking, I let
it depressurize naturally for about 10 minutes (if I am hungry, I cheat and
pop the valve open for quick release after five minutes). 
Melt-in-your-mouth good though your method involves less dishwashing.

A recipe from my mom that I enjoy making though I cut the recipe in half at
least.  She used to make this recipe for five hungry kids and one hungry
husband. :P

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Mom's Cheddar Cheese Sauce
 Categories: Sauces, Seandennis
      Yield: 5 Cups
 
    1/2 c  Butter or margarine
    1/2 c  Flour
      1 t  Salt
    1/2 t  Pepper
      4 c  Milk*
      2 c  Shredded mild cheddar (8 oz)
 
  In a large saucepan over medium heat, melt butter then whisk in the
  flour, salt, and pepper.  Gradually add milk and bring to a boil;
  cook and stir for two minutes or until thickened.  Reduce heat; add
  the cheese. Cook and stirl until cheese is melted.  5 1/2 cups yield.
  
  Add to macaroni (onion and ham is good with macaroni), vegetables, or
  baked potatoes.
  
  * = Mom's note: "I use 2 cups evaporated milk and 2 cups of water for
  the milk ingredient."
  
  Sean's note: This sauce is good and thick.  It makes for a great
  macaroni and cheese with ham or poured over gently steamed broccoli
  florets.
