MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Breakfast Quesadillas
 Categories: Breakfast, Cheese, Tortillas, Lunch, Boat
      Yield: 2 Servings
 
      1 c  Mozzarella cheese
      4    8 in flour tortillas
    1/2 lb Sausage, cooked, drained *
    1/4 c  Chopped green onions
      1 c  Salsa, if desired
 
  * Can substitute 1/2 cooked leftover chicken, ground beef, mashed
  beans, scrambled eggs, etc.
  
  Heat oven to 400 F.  Spray cookie sheet with nonstick cooking spray.
  Sprinkle 1/4 cup cheese over half of each tortilla to within 1/2 inch
  of edges.  Spoon 2 tablespoons of cooked meat (or bean)  and 1
  tablespoon onions over cheese on each tortilla.  Fold each tortilla
  in half over filling.  Place on spray coated cookie sheet.
  
  Bake at 400 for 5 - 8 minutes or until cheese is melted and tortilla
  edges are light golden brown and slightly crisp.  Cut tortillas in
  half, serve with salsa if desired Book 1
