Ok:

Step One:

In the Windows Mail Window, look at the top right hand corner of the
window, you will see three small icons with a small arrow pointing down,
one icon looks like a paint brush, another is a circle with a question
mark, you dont want any of those, pick the one in the middle.. Click on it
and a small context menu opens, select 'Options'.

Step 2:

When the Options Menu opens, you will see a tabbed window, you want to
select the 'Send' tab.

Step 3:

You will see radio boxes to select the message format to use when writing
messages for Mail and then news, in the copy I downloaded and installed,
the news format, which is what we use here, was already checked for plain
text, be sure that yours is as well and not html.

Step 4:

Back in options, click on the 'Compose' tab, make sure you arent using any
stationary or business cards, make sure those boxes remain unchecked for
'News'.

Step 5:

Click on the Signature tab, make sure that any signature is just text.

On another note, I was off work today but dont get another day off until
next friday, I bet if you ask Ed Hulett, he could help you configure
Thunderbird remotely. http://www.logmein.com or http://www.gotomypc.com or
http://www.gotoassist.com, all of these provide a free way for him to
remotely control your PC, I bet he can get you going in a jiffy. I wouldnt
think Ed would mind?
