The seedlings have already begun germination, and are green from
chlorophyll stored in the seed itself. As far as I can determine,
citrus shoots are never colourless, thus having to green up. They
really are a "Sunny" fruit. :-)

Sure. I have an ornamental (edible) miniature potted orange.
Occasionally I will pluck and eat one of its tender-skinned but VERY
sour fruits, and will sometimes crunch a seed. The seed is always
green inside. Occasionally I plant an uncrunched seed, and the last
one sprouted triplets - 3 shoots in 1. I separated them just to see
what happens. :-)
