Since you don't say (1) the type and number of clients that are going to 
connect to your server, or (2) what kind of apps you are going to be serving 
(web server, database server, file & print server...) take my vote with a 
large grain of salt....
If you're going to be participating in an NT domain, you should get NT, if 
you're serving Netware clients, probably Netware SMP. If neither, probably 
Warp Server...
The other big factor in your choice is probably going to be, are all your 
hardware goodies on the compatibility list for whichever OS comes up as your 
first choice?
It's always a downer to spend big bucks on hardware and software and then 
find out that one last device driver you need to make the whole thing work 
together reliably, doesn't exist yet.........
