An amazing cheese from a small Quebec cheesemaker: The Customs

Le Douanier is a semi-soft cheese produced by Fritz Kaiser. It's
made from pasteurized cow's milk. The cheese has an edible washed
rind, so it has a somewhat pungent aroma, although not nearly as
strong as Limburger, but rather like Oka. The flavor is mild, creamy
and a little nutty.
One thing that makes it unique is that there is a layer of vegetable
ash running through the middle, after the style of French Morbier
cheese on which it modeled.
Le Douanier won the Grand Champion award at the Canadian Cheese
Grand Prix. It is without doubt the nicest washed rind soft cheese I
have ever encountered.
