Another combination made out of desperation that turned out really
tasty. I'll do this one again: bean and cheese burritos smothered
with Vietnamese peanut sauce!
I had some cheap frozen supermarket burritos at work and no salsa
or hot sauce to go with them, so just for the heck of it I grabbed an
old takeout container of restaurant peanut sauce from the fridge and
doused them with it after I nuked them. I never would have guessed
it but the flavour combination was fantastic.
What has everyone else been up to?

Title: Simon Bao's Hoisin-Peanut Sauce

Yield: 4 servings
1 c Hoisin sauce
1/2 c Water
1/4 c Rice wine vinegar
1/3 c Pureed or finely minced
Yellow onion
1 tb Ground chili paste
1 tb Chopped roasted peanuts for
Garnish
Put first four ingredients into a small saucepan and bring to a boil.
Reduce heat and let simmer for 5 to 7 minutes. Add a little water if
too thick. Set aside to cool. Transfer mixture to a sauce dish and
garnish with chili paste and chopped peanuts.
