How would you express multiple days without the line getting too long? I
wanted to avoid long lines of text, because it tends to defeat the
human-readable aspect.

This is not really any different to:

Address 1:234/567
Operating Dialup FTS-1 at 61-1-1234-5678,XA
Online Sat 00:00-06:00

Address 1:234/567
Operating TCP/IP Binkp at 127.0.0.1
Online Sun 00:00-06:00

Which the spec allows.
