Italian stirfry ...
I felt like stir frying vegetables in the Chinese manner but using
Italian vegetables and seasonings. The results made me happy. Here's
what I did:

Stirfried Italian vegetables
reserved grease from frying Italian sausages
1/2 leek, both white and green parts, sliced and chopped
1 sm onion, diced
1 c chopped. mixed red, yellow and green bell peppers,
about 1/4 pepper of each colour
2 ribs celery, diced
3 cloves garlic, pressed or minced
1 tsp Italian seasoning
1/4 ts red pepper
1/4 ts black pepper
1 leftover cooked sausage, sliced into coins, optional
1 c leftover cooked macaroni
2 tb rich, jellied chicken stock
In a wok, melt the sausage grease. Stir fry the vegetables briefly.
Add the garlic and seasonings and continue frying. When they are
cooked but still tender crisp add the sausage, pasta and stock. Fry
stirring until the stock is melted and the sausage and macaroni warmed
up. Serve.
