That's because we are the 800 lb gorilla in the cage. I know *some* of
Canadian history - mostly relating to the building of the Canadian Pacific
which was promised to British Columbia to entice them into joining the
confederation of provinces. And the delays due to political red tape and
wonky financing darned near caused them to "pull the plug" and go it
alone.

My bucket list includes a VIA Rail trip from Windsor to Vancouver. Then

I am not a huge fan of cilantro. But, if you sub parsley for it the dish
will not taste "right". I often adjust the quantity of "soap weed" to
tolerable levels - but, I've learned that if the recipe calls for it you
*must* have some.

My pico de gallo - which the ICS calls "salsa" is a good example. I did
not begin to win prizes until I added the cilantro.

      Title: Fresh Pico de Gallo
 Categories: Five, Vegetables, Chilies, Herbs, Citrus
      Yield: 2 Servings
 
      1 lg White onion; fine dice
      4    Ripe plum tomatoes; seeded,
           - diced *
      2    (or 3) jalapenos or serranos
           - or a combination: seeded;
           - fine chopped
    1/2 c  Fresh cilantro leaves;
           - chopped
      1 tb Lime juice
           Salt
 
  Combine all the ingredients, cover, and refrigerate for
  an hour.

  * I sometimes substitute a 14 oz can of diced tomatoes 
  w/chopped green chilies.
