Frybread, like bannock, is pretty much universal. They are both very
popular in the far north. I made a big batch of fry bread last
Sunday. Standard white bread dough lightly shaped into a one inch
thick disk the size of my large cast iron pan after rising, then
shallow fried in lard and flipped over like a pancake midway. This
style is way too thick to fold into tacos so all the toppings are
just piled on top of a flat one and it's served open faced.
Four cups of flour makes two large fry breads which yield four
generous wedge shaped portions each.
