Smokies:
These are a hotdog bun sized Ukrainian Kovbasa (sausage) similar
to a small, extra garlicky Polish Kielbasa Wiejska. They are the
length of wieners but bigger around. So, similar to German
Knackwurst.
Stawnichy's Ukrainian Sausage AKA Mundare Sausage, made in Mundare,
Alberta just east of Edmonton is widely considered the best of its
kind. Ed Stawnichy makes all kinds of other pork products too
but is best known for his Smokies.
His recipe is of course a trade secret.
You can cook and serve them like brats: simmer them in beer, with
onions and peppers, then grill them and serve them in a bun with
kraut and mustard.
