The fresh leaves taste and smell very different than the extracts
used as flavourings in toothpaste and mint candies.

There are so many kinds.
Peppermint is the toothpaste one. But a little spearmint goes well
with oregano and thyme in Mediterranean blends; it has quite a
different taste profile.
And Roslind has grown pineapple mint, apple mint, chocolate mint and
orange mint. Each one tastes a little like its namesake as well as
being minty.
Some vegetable dishes are really nice with a touch of mint leaf
seasoning: boiled carrots and green peas both spring to mind.

Title: Minted Peas

Yield: 8 Servings
1 c Water
1 tb Sugar
3 Sprigs fresh mint plus
-additional for garnish
1/2 ts Salt
2 tb lemon juice
20 oz Frozen peas
3 tb Butter
1 pn Black pepper
In a large saucepan combine water, sugar, mint, salt and lemon
juice. Bring to a boil. Add frozen peas. When water returns to a
boil, cook until peas are heated through, about 1-2 minutes. Drain
the peas. Toss them with butter and pepper; serve with more fresh
mint leaves for garnish.
