MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Today's Lunch (Michael Loo)
 Categories: Meat, Stir fry
      Yield: 1 Servings
 
    1/2 c  Beef flank, cut on the bias
           Into thin sheets and then
           Recut into bite-sized
           Pieces
      1 t  Sherry
      1 T  Oil
    1/4 c  Scallions, in 1" lengths
      1    Neysa Dormish's Thai hot
           Pepper, chopped (about 1 t)
    1/4 c  Coconut milk
    1/4 c  Frozen peas
      6    Basil leaves, torn in two
      1 T  Fish sauce
      1 t  Sriracha or other hot sauce
 
  Flank was on sale for $3.99 a pound. So I got a big piece and sliced
  it up and portioned it out into individual servings.
  
  Marinate meat briefly in sherry.
  
  Heat oil high. Stir-fry beef until the surface changes color. Push
  beef over to one side and add scallions and pepper.(1) Cook very
  briefly and add coconut milk.(2) Stir everything together once and
  push all solids over to one side. Heat the liquid keeping the flame
  under just that part of the pan; when it bubbles and complains, add
  the peas, basil, fish sauce, and hot sauce.(3) Lower heat and cook to
  desired thickness. Before serving, reincorporate the meat and veg
  that had been pushed over to the side. Serve with plain boiled rice.
  
  Notes:
  (1) If I'd had a couple T of chopped carrot or eggplant I'd have
  added them here.
  (2) If I'd had a couple T of chopped sweet bell pepper of any
  color(4) I'd have added them here.
  (3) If I'd had a couple T of sliced bamboo shoot, I'd have added
  them here.
  (4) Any color except purple. I once made this dish with purple
  bell peppers, and the color leached out and gave the coconut
  sauce a sickly gray color.
