Alberta 2:
I'm sure everyone here knows what perogies are. Depending on where
you're from they're pierogies, perogi, pirohy, pirosti, vareniki,
varenyky, varenikie or varenikes.
I first encountered them as varenikes in Kosher style delis in
Ottawa. And perogies are very common fare throughout Alberta thanks
to its large Ukrainian population.
Here's a couple of twists that are less well known ...
As well as having potato, cheese and onion fillings you can make
dessert ones filled with Quark, honey and berries or jam, served
with whipped cream instead of sour cream.
After they are boiled, they can be panfried until golden brown. In
Yellowknife back when Nettie ran Nettie's Pyroghy House inside the
Gold Range they were deep fried until they had a crispy shell which
was tricky as if you overcooked them the molten cheese explodes.
They were the best!

Title: Passover Varenikas
Categories: Kosher, Beef, Potatoes, Dumplings
Yield: 6 Servings
2 c Mashed potatoes
1/4 c Matzo cake meal
1 ts Salt
1/8 ts Pepper
3 Eggs
1 c Cooked beef; chopped
1/2 c Matzo meal
Combine potatoes, cake meal, 2 eggs and seasonings. Form into
balls. Make a depression in each, and fill with meat. Enclose with
potato mix. Flatten slightly, dip in egg, then meal, and fry till
brown.
