Your favorite recipe
2 c Pastry cream; made according
To your favorite recipe
1 oz Grand Marnier
4 oz Superfine sugar; not
Confectioners'
2 oz Cognac
2 oz Grand Marnier
Beat 1 oz Grand Marnier into the pastry cream.
Put 1 generous T pastry cream onto each crepe and roll it up.
Arrange crepes on a buttered baking dish and sprinkle with sugar.
Broil 3 min or until sugar glazes over.
Flambe the dish with the Cognac and Grand Marnier, heated together.
Serve at once.
