I had forgotten about Don The Beachcomber. I was in his Huntington Beach
location (Californica). AFAIK all of his Califunky (his ex-wife's
actually) locations are closed.
Celebrate national rum day (16 August) with this Tiki cocktail ...
MMMMM----- Recipe via Meal-Master (tm) v8.06
Title: Don The Beachcomber's Nui Nui

Yield: 1 Tiki drink
1 1/2 oz Gold Virgin Islands rum
1/2 oz dark Demerara rum
1 ts St. Elizabeth Allspice Dram
1/2 oz Fresh squeezed lime juice
1/2 oz Fresh squeezed orange juice
1/4 oz Cinnamon-infused syrup *
1 ts Vanilla-infused syrup **
ds Angostura bitters
1/2 c Crushed ice
Cinnamon stick; garnish
Thin strip orange peel;
- garnish
Add all ingredients into a blender.
Pour into a tall glass and add ice to fill. Umbrella
optional
* Cinnamon-infused sugar syrup: Crush 3 cinnamon sticks
and place in a saucepan with 1 cup sugar and 1 cup
water. Bring to a boil, stirring until sugar is
dissolved. Lower heat, cover saucepan and simmer for two
minutes. Remove saucepan from heat and, keeping it
covered, let sit at least two hours before straining and
bottling. It will keep, covered and refrigerated, for
about 1 month.
** Vanilla-Infused sugar syrup: Flatten two vanilla
beans with the flat edge of a knife. Split beans in half
lengthwise and scrape out the pulp. Place the split
beans and the bean pulp in a saucepan with 1.5 cups
sugar and 1 cup water. Bring to a boil, stirring until
sugar is dissolved. Lower heat, cover saucepan and
simmer for two minutes. Remove saucepan from heat and,
keeping it covered, let sit at least two hours before
straining and bottling. It will keep, covered and
refrigerated, for about 1 month.
