I suppose, like other things in the diet, her body lets her know when
she has partaken of too much of a good thing.  Fortunately, I have not
had any real reactions to anything I care to eat.  Unfortuately, Gail is
sensitive to rich dairy products (but not all dairy).

This dish might have upset her with the heavy cream sauce.  But of
course, most sauces can be put onto the side or used sparingly.  I'm a
little surprised that this is a Michael recipe, given his distaste for
blue cheeses.

      Title: Pan-Roasted Rib Eye With Gorgonzola Vidalia Onions
 Categories: Todd englis, Olive, Boston, Meat
      Yield: 4 Servings
 
      4 lg Sweet onions; Vidalia, Texas
           Sweet, Walla Walla, etc.
      1 tb Olive oil
      2 tb Fresh rosemary leaves;
           Chopped
      1 ts Kosher salt
    1/2 ts Pepper
      2 tb Sweet butter
    1/2 c  Smoked ham; chopped
      1 c  Heavy cream
      2 ts Fresh rosemary leaves;
           Chopped
      2 tb Scallion greens; minced
      1 tb Olive oil
      4 ea Rib eye steaks, 10 oz each
           ; substitute other tender
           Cut
      1 ts Kosher salt
      1 ts Pepper
    1/3 c  Gorgonzola; crumbled
 
  Oven at 450F.
  
  Sprinkle onions with 1 T oil, 2 T rosemary, 1 t salt, 1/2 t pepper.
  Roast in a roasting pan for 20 min. Reduce heat to 250F and roast
  an additional 45 min. Remove onions and peel as soon as they are
  cool enough to handle. The onions may be eaten as is, or used in
  the place of sauteed onions, as well as used in this recipe.
  
  Slice the onions.
  
  Heat a large skillet over medium heat. When it is hot, add the
  butter, onions, and ham. Cook about 8 min or until beginning to
  caramelize.
  
  Add cream, rosemary, and scallions and cook about 5 min.
  
  Meanwhile, heat a large cast-iron skillet. Add 1 T oil and
  sprinkle steaks with salt and pepper. Cook steaks in skillet
        4    min a side for medium-rare.
  
  Add cheese to onions and heat through. Dish the onions onto
  plates. Slice the meat on the bias and arrange the slices over
  the onions.
