The cereal is mostly wheat. There is less barley extract used than
either sugar or salt.
Malt is made by sprouting cereal grains that has been dried, then
soaked in water and finally dried again with heat after they start
to grow. This develops enzymes that change starch into sugar, so
that yeast can make beer.
Malted grain is also used to make whisky, malt vinegar and to
flavour milk drinks like Horlicks, Ovaltine and Milo.
Malt syrup is a sweet, molasses-like liquid made by "mashing" the
malt.
Brewers warm cracked malt in warm water activating other enzymes
which convert more starch into maltose (malt sugar). The liquid
produced from this is called beer wort.
Wort can then be concentrated by evaporation until it becomes a
thick syrup or even a dry powder called malt extract which is what
the Shreddies company uses to add extra flavour and sweetness to the
strands of wheat that makes the little biscuit squares they sell.
