Hi Sean,
I remember seeing these performances when they were on TV. Seeing them
today it's obvious the actual performances were synced up live such that
the vocals were real, the instruments weren't. They "played" to a pre
recorded track and actually sang along into live mics. I think George
Martin starts them off from the control booth by cueing the band in the
beginning.
You can see and hear Pauls vocal sounding like a nice double track vocal
on Hey Jude especially when the camera is close up to him. Ringo on the
other hand is obviously trying to not hit his cymbals and drums too loud
so as to loose being able to hear the prerecorded original track. The
vocals are also great on Revolution with the added refrains by Paul and
George (bahooom shooby do wah;-).
A few years ago someone gave me an mpeg copy of these performances to look
at that I think was probably recorded off of the televsion broadcast.
-So to answer your question they must have been recorded. The broadcast
sound as far as the state of the art then for television was monophonic.
The video probably 35mm. Possibly they also recorded it multi track.
(They obviously had the original recording the band played along with.)
What I saw sound and video wise looked good, so the sound and video must
have also been pretty good if not the best they could have for the medium
of television at the time.
