So do I. My heritage is mainly British but I had Polish friends in
Ontario, Ukrainian friends in Alberta and my oldest granddaughter's
other grandfather is Russian, so I became familiar with it a long
time ago.
My favourite way to prepare it is to fry chopped onions in chicken
fat, toast the groats and then add them to the onions with just
enough chicken broth to moisten them and finish cooking them.

Title: Belarus Buckwheat Pancakes

Yield: 4 Servings
1 1/2 c Buckwheat flour
1/2 c Wheat flour
2 c Milk
20 g Yeast
1 tb Sugar
1 tb Butter
2 Eggs, separated
Salt
Prepare a sponge by dissolving the yeast in two thirds of the
milk warmed to a temperature of 35 to 40 C, adding half the flour
and stirring until smooth. Cover and leave in a warm place for
1-1.5 hours.
After the sponge rises add the salt, sugar, egg yolks, melted
butter, buckwheat flour, mix, pour in the milk warmed up to 40-45
C. Set aside to rise, then fold in the whipped egg whites.
Fry the pancakes and serve with the cottage cheese mixed together
with butter.
